Raw Vegan Coconut Yogurt

Here is a recipe for a raw vegan yogurt that tastes great either by itself or with your favorite fruit mixed in.

  • The Meat from 2 Young Thai Coconuts
  • Enough Water from the Coconuts to Cover the Coconut Meat
  • 1/2 Teaspoon of a good probiotic (Click here for the best)

That’s it. Put it all in a high speed blender and mix until smooth. Then put in glass jars. Fill about 3/4 the way full. It will expand so do not fill to the top. Do not seal the lid tightly either as gases are created as the yogurt cultures. Depending on the temperature where you are, you can leave it out on the counter for 4 hours or overnight. Ideal temperature is 78-85 deg F. After a few hours, if you see bubbles forming in the jar and it has a sour taste, it is ready to eat or you can move it to the refrigerator. Every day it will continue to culture and get a little more sour. It is a good thing, the probiotics are multiplying. It will be good for about 2 weeks. If it has an off smell and taste then throw away. But don’t worry, it won’t last that long because you will eat it all up before then.
