Now I must admit it has been quite a long time since I had real scrambled eggs. If my memory serves me well this is pretty close to the taste and texture without the eggs, more like scrambled avocado.
Here is what you will need:
- 1 Avocado
- 1 tsp Black Sulfur Salt (You can get it on Amazon by following this link)
- 1 tsp Turmeric
- 1 Tbsp Nutritional Yeast (Optional, gives it a little bit of a “cheesy” flavor)
Then whatever you like in your scrambled eggs, I usually put…
- Red Bell Pepper
- Purple Onion
Get creative, you could even put nuts or seeds or tomato, maybe some cumin, or cayenne.
First find a nice avocado that is ripe (you can check my post on selecting avocados here).
Next cut it in half lengthwise. Twist each half to open it up. Remove the seed.
Cut the avocado into cubes and put in a bowl.
Then cut up your add ins, add the sulfur salt and turmeric, then proceed to scramble.
The magic is in the sulfur salt, you can add more or less to taste. If you don’t get the egg taste at first add a little more sulfur salt. Tastes just like eggs. Let me know what you think about the scrambled avocado.
